Homemade Rissoto
2 tblsp oil
2 onions chopped
4 ribs celery chopped
4 cloves of garlic chopped
1 1/2 cups aborio rice
1 box chicken stock or vegetable stock
4 tblsp salted sweet cream butter
1 cup grated parmesan cheese
1 bag of frozen vegetables
meat, sea food or fish of your choice
1) heat oil in pan and add onions, celery and garlic, saute until tender.
2) add the rice and stir until well coated with the oil for 5 to 10 minutes.
3) start adding the stock 1 cup at a time and stir over medium heat until rice is fully cooked and stock is gone.
4) add the frozen vegetables and cook until heated through.
5) add the meat, sea food or fish and let cook through.
6) last add the cheese and serve.
Optional leave out meat, sea food or fish and serve as a side dish.
