City Chicken

 2 lbs pork or pork veal mix (chopped into 1 -1 1/2 inch pieces 12 thick wooden skewers 1 c all-purpose flour 1 c italian bread crumbs 2 eggs beaten with 1/2 c milk seasoning mix (video on youtube heart & Soul Cooking & Crafting / Recipe on the blog) 1/4 c vegetable oil 1 stick unsalted butter 2 c chicken stock Vegetables ( potatoes, carrots, celery, onions) cut into 1 inch pieces (about 3 c worth) 4 large cloves of fresh garlic thinly sliced 2 tblsp chopped cilantro 1) put meat onto skewers 3 - 4 pieces and coat with seasoning mix. 2) coat with flour, egg mixture and then bread crumbs and set aside. 3) in an electric skillet heat oil and add the butter and let melt. 4) add the skewers and let brown on all sides about 2 minutes each side and set aside. 5) add vegetables and garlic to the pan and saute until browned. 6) add skewers back to the pan and add the stock, reduce heat to medium. 7) cover and let cook for 1 hour or until meat is tender. 8) add cilantro and serve. Homemade Rissoto

2 tblsp oil 2 onions chopped 4 ribs celery chopped 4 cloves of garlic chopped 1 1/2 cups aborio rice 1 box chicken stock or vegetable stock 4 tblsp salted sweet cream butter 1 cup grated parmesan cheese 1 bag of frozen vegetables meat, sea food or fish of your choice 1) heat oil in pan and add onions, celery and garlic, saute until tender. 2) add the rice and stir until well coated with the oil for 5 to 10 minutes. 3) start adding the stock 1 cup at a time and stir over medium heat until rice is fully cooked and stock is gone. 4) add the frozen vegetables and cook until heated through. 5) add the meat, sea food or fish and let cook through. 6) last add the cheese and serve. Optional leave out meat, sea food or fish and serve as a side dish.

Stuffed Rigatoni Bake

1 bag or box rigatoni pasta 1 lb ground pork 1 1/2 lb ground beef 1 bunch scallions finely chopped 1 bunch flat leaf parsley finely chopped 1 1/2 tblsp garlic powder 1 tblsp ground black pepper 2 eggs beaten 3 tblsp water 1 tblsp coarse sea salt 2 small cans tomato sauce 1 small can tomato paste 1 jar roasted garlic pasta sauce 1 package grated italian cheese blend 1) mix the meats with eggs, water, seasonings, parsley, scallions and tomato paste and set in the frige until ready to use. 2) bring a pot of water to a boil and add salt and oil to the water and cook pasta until tender, drain and rinse the pasta under cold water to stop the cooking process. 3) using alluminum foil line small loaf pans or a 13 x 9 baking dish or a spring form cake pan. 4) using the small cans of sauce put the sauce on the bottom of the baking dish to coat. 5) put the meat mixture into a piping bag with a medium cake decorating tip or into a plastic zipplock bag with the corner cut and pip the meat mixture in...

appitizers two ways

 Steak Appitizer: Leftover grilled steak saltine crackers grated 3 blend cheese 1 stick unsalted butter melted all-purpose seasoning 1) add seasoning to melted butter and brush it onto the crackers. 2) put the crackers in a preheated 350 degree oven until golden brown, remove from oven and set aside. 3) slice the steak into thin slices. 4) put 2 pieces of steak onto crackers and top with the cheese. 5) put into 350 degree oven to melt the cheese. 6) serve on a platter or the cookie sheet. Lamb & Pork Appitizer: saltine crackers 1 stick unsalted butter melted all-purpose seasoning 1 package lamb stew meat 1 package ground pork 2 eggs 3 cheese blend 1 cup sauteed onions 3 tblsp water sliced baby swiss cheese 1) grind the lamb in food processor and add to a mixing bowl. 2) add all ingredients up to the water and mix. 3) next add the water and mix, set this aside. 4) add seasoning to the melted butter and brush onto the crackers, place into a preheated 350 degre oven until golden b...

Stuffed Porkloin

 1 package porkloin 3 medium onions sliced all-purpose seasoning 6 slices baby swiss cheese 2 tblsp extra virgin olive oil toothpicks or kitchen twine  1) in a frying pan heat oil and saute onions until soft, set aside and let cool completely. 2) remove pork loins from package and dry. 3) butterfly the pork loins , put them into a 2 gallon ziplock bag and pond to about 1/4 inch thick. 4) place the pork onto a cutting board and top with onions and cheese. 5) roll the pork into a log shape and seal the seam with toothpicks or kitchen twine and season the outside with all-purpose seasoning. 6) put the pork on a foil covered cookie sheet and put into a preheated 350 degree oven and cook for 25 -30 minutes. 7) remove from oven, cover with foil and let rest for 10 minutes, slice and serve with your favorite side dishes. enjoy

Lasagna Roll Ups

 2 Lb 80% ground beef  (can substitute with Turkey, Pork or Chicken) 2 medium yellow onions (chopped) 2 tblsp herb & spice mix ( on blog) 1 16oz container ricotta cheese 2 packages shredded Italian Blend cheese 1 bag fresh spinach 2 jars marinara sauce 1 box lasagna noodles 2 small cans tomato sauce 1 tblsp garlic powder 1 tblsp onion powder 1 tsp coarse sea salt 1 large foil disposable pan 1) Saute onions until soft and add ground beef and 1tblsp spice mix and mix together with potato masher. 2) Add half the bag of spinach to the meat and onions and stir until spinach is cooked. 3) in a bowl add ricotta cheese and chop the rest of the spinach and add to the ricotta cheese with 1 tblsp spice mix, garlic powder, onion powder and salt.  4) Bring a pot of water to a boil and cook the noodles until almost tender. 5) Lay a noodle down on a cutting board and spread a thin layer of the ricotta mixture, then top with the meat mixture and roll. 6) Use the 2 small cans of tomat...
