Take leftover meatloaf and slice it into 1/8" to 1/4" thick slices and set aside. In a bowl combine 1 container ricotta cheese, 1 container sour cream, 1 cup chopped fresh cilantro, 3 chopped bulb green onions. In another bowl combine 1 jar tomato sauce, 1 can tomato paste, 1 small can tomato sauce, and 1 cup chopped fresh cilantro. Cook lasagna noodles until aldente and coat with oil so they don't stick together. Now you can use mini loaf pans or make one large lasagna. It's up to you. If you use the mini loaf pans this will make 8 mini lasagna's. Take parchment paper and cut to fit the mini loaf pans and spray with cooking spray. Start with tomato sauce, noodle, ricotta cheese mixture, slice of meatloaf, sauce and mozzarella shredded cheese. The repeat the process. Top last noodle with sauce and bake at 350 degrees until fully heated through and noodles are slightly browned. Top with more mozzarella cheese and bake until cheese is golden brown. Same layering ...
