Salmon Cakes

 1 1/2 lb fresh salmon 1 can chick peas Rinsed and drained 1/2 onion finely chopped 4 cloves garlic finely chopped 1 egg 1) chop fish into small chunks and set aside in a bowl. 2) in food processor pure chick peas, onion, garlic and egg. 3) add 1/4 cup of chick pea mixture to the fish and mix. 4) in a sauté pan heat some oil and scoop fish mixture into pan in 4 portions. 5) brown for 2 minutes on first side then flip and cook for 2 minutes on second side.

Lamb & Chicken Liver Souffle

1 1/2lb lamb stew meat 1 tub chicken livers (rinsed and dryed) 2 tablespoons baking powder 2 egg yolks 2egg whites 1/2 tsp sea salt 1 1/2 tsp pepper 1 tablespoon garlic powder 1 tablespoon onion powder 1 tablespoon balsamic vinegar 1/2 c flour 1) in food processor blend meats until smooth and add to a mixing bowl. 2) add all other ingredients except egg whites and mix well. 3) whisk egg white to stiff peaks and then fold them into the meat mixture. 4) spray ramakins with cooking spray and add the meat mixture. 5) put into a 350 degree oven and bake until a skewer inserted comes out clean. 6) serve warm. Spagetti Squash Stir-Fry

1 spagetti squash about 2 lbs 2 bunches bulb green onions 1 lb green beans 1 lb broccoli rabe 1 1/2 tblsp garlic powder 1 tblsp black pepper 1 1/2 tblsp onion powder 1 tblsp chili powder 1 1/2 tblsp balsamic vinegar 1) cut squash in half and clean out the seeds, place on cookie sheet and coat with extra virgin olive oil, salt and pepper. 2) put into a 350 degree oven until tender, use a fork and scrape the squash into a bowl. 3) in a large electric skillet add 2 tblsp extra virgin olive oil and saute onions, green beans and broccoli rabe until tender. 4) add the seasonings and vinegar and stir to coat. 5) add the squash and stir. 6) serve with your favorite meat, fish or seafood. Enjoy 

Potato Bread

1 packet of dry yeast 1/4 cup luke warm water 1 pinch sugar Mix these together and set aside. 1 stick unsalted sweet cream butter melted 1 cup half n half Mix together and set aside. 4 large eggs 1 1/2 cups mashed potatoes 1 1/2 tblsp garlic powder 1 1/2 tblsp onion powder 1 tblsp coarse sea salt 1 tblsp ground black pepper Whisk these ingredients together until smooth. Then add the yeast and butter mixture and whisk until smooth. 4 - 6 cups flour sifted To the potato mixture start adding the sifted flour and mix with hand until a nice dough forms and knead until smooth. This can be done in a stand mixer but is better by hand. Once dough is formed put into an oiled bowl, cover with a towel and set aside to rise for 2 hours. Form into buns, dinner rolls or a loaf. Cover and let rise again until double in size. Bake at 350 degrees until golden brown. Enjoy.

Asian Beef Stir-Fry

2 pounds sliced beef loin 3 bulb green onions sliced 3 king oyster mushrooms small bunch asian chives chopped 6 asian bok choy chopped and rinsed 1 1/2 tblsp soy sauce 2 1/2 tblsp hoisin sauce 1 1/2 tblsp fish sauce 1 1/2 tblsp oyster sauce 1/4 c asian cooking wine 2 tblsp chopped garlic sesame seeds (optional) 1) marinate the meat with balsamic vinegar, extra virgin olive oil, herb and spice mix ( video on youtube channel heart & soul cooking & crafting) over night. 2) in a wok heat 1 tblsp oil and brown the marinated meat in batches and set aside. 3) saute bok choy and onions until it starts to cook down and add the garlic. 4) next add mushrooms and saute for 5 minutes. 5) add soy sauce, hoisin sauce, fish sauce, oister sauce and cooking wine and let reduce by half, 6) mix cornstarch and water together and add a little at a time until desired thickness. 7) add the meat back to pan and add the asian chives, remove from heat and serve over rice or asian noodles.
