Spagetti Squash Stir-Fry
1 spagetti squash about 2 lbs
2 bunches bulb green onions
1 lb green beans
1 lb broccoli rabe
1 1/2 tblsp garlic powder
1 tblsp black pepper
1 1/2 tblsp onion powder
1 tblsp chili powder
1 1/2 tblsp balsamic vinegar
1) cut squash in half and clean out the seeds, place on cookie sheet and coat with extra virgin olive oil, salt and pepper.
2) put into a 350 degree oven until tender, use a fork and scrape the squash into a bowl.
3) in a large electric skillet add 2 tblsp extra virgin olive oil and saute onions, green beans and broccoli rabe until tender.
4) add the seasonings and vinegar and stir to coat.
5) add the squash and stir.
6) serve with your favorite meat, fish or seafood.
