Lamb & Chicken Liver Souffle
1 1/2lb lamb stew meat
1 tub chicken livers (rinsed and dryed)
2 tablespoons baking powder
2 egg yolks
2egg whites
1/2 tsp sea salt
1 1/2 tsp pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon balsamic vinegar
1/2 c flour
1) in food processor blend meats until smooth and add to a mixing bowl.
2) add all other ingredients except egg whites and mix well.
3) whisk egg white to stiff peaks and then fold them into the meat mixture.
4) spray ramakins with cooking spray and add the meat mixture.
5) put into a 350 degree oven and bake until a skewer inserted comes out clean.
6) serve warm.
