Potato and Spinach mini Muffins

Leftover mashed potatoes
3 large eggs
1 tbsp baking powder
1/2 tsp baking powder
1 cup half n half
1 1/2 cup shredded cheddar cheese blend
1 cup chopped fresh spinach
1 tbsp black pepper
1 tbsp + 1/2 tbsp garlic powder
1 tbsp + 1/2 tbsp onion powder
1 cup + 1/2 cup all-purpose flour

Mix all ingredients together to make a batter.

Spray silicone mini muffin pans with cooking spray and spoon mixture into pans.

Bake at 350 degrees until golden brown.

Enjoy.

Can cryovac and freeze for future enjoyment.
