Stuffed Rigatoni Bake

1 bag or box rigatoni pasta

1 lb ground pork

1 1/2 lb ground beef

1 bunch scallions finely chopped

1 bunch flat leaf parsley finely chopped

1 1/2 tblsp garlic powder

1 tblsp ground black pepper

2 eggs beaten

3 tblsp water

1 tblsp coarse sea salt

2 small cans tomato sauce

1 small can tomato paste

1 jar roasted garlic pasta sauce

1 package grated italian cheese blend


1) mix the meats with eggs, water, seasonings, parsley, scallions and tomato paste and set in the frige until ready to use.

2) bring a pot of water to a boil and add salt and oil to the water and cook pasta until tender, drain and rinse the pasta under cold water to stop the cooking process.

3) using alluminum foil line small loaf pans or a 13 x 9 baking dish or a spring form cake pan.

4) using the small cans of sauce put the sauce on the bottom of the baking dish to coat.

5) put the meat mixture into a piping bag with a medium cake decorating tip or into a plastic zipplock bag with the corner cut and pip the meat mixture into the rigatoni pasta , then stand the stuffed pasta upright into the baking dish.

6) fill the baking dish with the stuffed pasta and top with the garlic sauce, put into a 350 degree oven for 20 minutes, remove from oven and top with cheese, then put back into the oven to melt and brown the cheese.

7) remove from oven and let sit for 10 minutes, then serve with a side salad.
