from Scratch Potato/corn/Ham Moufflee's
Leftover mashed potatoes(I had 6 cups)
8 eggs beaten
2 tbsp baking powder
Corn from 3 ears of oven roasted corn on the cob
Triple cheddar cheese shredded 1-2 cups
All purpose seasoning 2 tbsp
Oven roasted ham chopped (I had 2 cups)
Potato starch at least 2 cups
1 cup Water
Mix all ingredients together to batter.
Spray cupcakes tins with cooking spray and spoon mixture into them.
Next bake at 375 degrees until golden brown and skewer inserted in center comes out clean.
Enjoy
This recipe yeids at least 12 Mouflee's.
