Loaded Baked Potato Soup

6 large Idaho potatoes (baked)
2  large yellow onions.chopped
2 tbsp chopped garlic 
8 ribs celery chopped 
1 - 2 packages low sodium bacon baked until crispy and chopped 
1 1/2 cups shredded cheddar cheese 
1/2 cup chopped scallions 
1 container sour cream 
1 cup half n half 
1 box chicken or vegetable stock 

1) saute onions, celery and garlic until soft.
2) add the potatoes and heat through, then add stock.
3) add half n half and simmer for 10 minutes.
4) add the bacon, sour cream, cheese and scallions and enjoy.

This freezes well.
