Baked Potato Biscuits
1 1/2 cups baked Mashed potatoes
4 eggs beaten
1 tbsp baking powder
2 tbsp complete seasoning
1 1/2 cups shredded sharp or mild cheddar cheese
1 stick sweet cream butter melted
1 1/2 - 2 cups all-purpose flour sifted (may not need all the flour)
1) mix eggs and potatoes until smooth.
2) add seasoning and mix.
3) add baking powder, butter and cheese mix until combined.
4) add flour 1/2 cup at a time until soft dough forms. You may not need all of the flour. It all depends on humidity of the day.
5) line baking sheet with parchment paper and spray with cooking spray.
6) drop dough by spoonful onto parchment paper and leave about an inch between them.
7) bake at 350 degrees for 20 to 25 minutes or until tops and bottoms are golden brown.
Let cool and enjoy.
